2015, The Den Cabernet Sauvignon

A medium to full bodied wine with typical Cabernet flavours of dark fruits, floral flavours of violets, cigar box augmented by toasty oak. The wine has a fruity nose with a lot of earthiness coming through. It has a lovely rich mid mouth texture, a long fruit driven finish with medium tannins.

The Vineyard

Grapes were sourced mainly from the Bottleray Hills area of Stellenbosch and Agter Paarl with a small component of Swartland Merlot


The Cabernet was harvested over a period of a couple of weeks in March 2015. The wine was crushed and fermented in tank with various oak staves. There were two extended pump overs per day for a few days followed by one pump-over a day. The wine was pressed when dry and put back into tank with staves to mature for 10 months. It was eventually blended with 15% Cabernet Merlot 2014 which had been barrel aged in small second fill barrels for 18 months. Once the wine was blended it was put back into tank for a further 6 months to settle before being bottled.

Ageing potential

This 2015 Den Cabernet is quite drinkable as a young wine, however will benefit for a few years of bottle aging. It will most likely be at its best around 2018/9 by which time most of it will have been drunk.

Food Suggestions

This is a good wine with hearty home cooking such as braaied lamb chops with mint chutney, a baked potato and green salad, spaghetti with spicy meat balls seasoned with parmesan cheese, parsley, garlic and chilli flakes in tomato sauce, a comforting shepherd’s pie. It is also lovely with a toasted cheese and ham sandwich.
